Description
Grape varieties: Chardonnay (80%), Folle Blanche (20%)
Winemaking methods: The alcoholic or primary fermentation of the base wines, which are a blend of the two varieties above, takes place at our winery. This blend then undergoes secondary fermentation in the bottle; this method of sparkling wine making is known as the ‘traditional method’.
Following at least nine months of bottle ageing, the wines are disgorged and topped up with liqueur d’expédition before going on sale.
Tasting impressions:
Appearance: Yellow-green colour.
Nose: Floral bouquet.
Palate: This wine has the supple mouthfeel of a traditional method sparkling wine. Delicate bubbles give the wine a fresh and subtle character.
Suggested food pairings:
Hors d’oeuvres and desserts.
Serve well-chilled at about 4°C to 6°C.
