Grape variety: Melon de Bourgogne

Terroir: This wine is made from our Clos des Renards plot, next to our ‘Vielle Vigne’ plot. The vines are 20 to 30 years old and are able to grow deep roots in the silty, sandy soils on micaschist bedrock.

Winemaking methods: After a period of skin-contact fermentation, which helps extract the full aromatic potential of the grapes, the must completes its alcoholic fermentation in 450-litre oak barrels. The wine is then racked into a vat for malolactic fermentation before being transferred back to a barrel for nine to 12 months ageing on lees. The wine is then bottled and left to age for two years in our cellars.

Bottling: Bottling takes place in November in the year after harvest.

Tasting impressions:

Appearance: Yellow gold colour.

Nose: Vanilla driven nose with extremely complex aromas of fresh butter, torrefaction and caramel.

Palate: This wine is very different from the classical Muscadet style as it has much less acidity due to malolactic fermentation. The palate is supple and rich with an oaky vanilla taste.

Suggested food pairings: This wine makes a surprising aperitif or partner for fish. It is also stunning with chicken in sauce or Roquefort cheese. For a daring combination, try it with spicy dishes.

Ageing recommendations: This wine is made to age and will happily keep for 10 years.
