Description
Grape varieties: 40% Chardonnay, 30% Pinot Gris, 30% Sauvignon Gris.
Terroir: The three varieties grow on silty, stony soils on bedrock of micaschist. With low yields, this terroir or ‘climat’ produces grapes that are rich in aromas and sugar, allowing us to make a round and fruity white wine.
Winemaking methods: The Pinot Gris grapes are harvested overripe in order to give us the highest possible levels of sugar. Alcoholic fermentation is stopped prematurely to obtain a wine with unfermented residual sugar of 8 to 12 grams per litre. This is achieved by chilling the wine and racking off any unfermented yeast. After fermentation, the Chardonnay and Sauvignon Gris are blended in the ideal proportions to obtain a wine with a good balance of acidity, fruitiness and sweetness.
Bottling: Bottling takes place in March or June in the year after harvest.
Tasting impressions:
Appearance: Lemon-yellow colour.
Nose: Intensely aromatic nose of fresh fruits and citrus notes.
Palate: The initial impression is silky and round, followed by fruity flavours with a lovely balance of acidity and sweetness.
Suggested food pairings:
Enjoy this wine on its own as an aperitif or with summer salads. Also goes well with fish or delicate savoury tarts.
Serve well-chilled at about 8°C to 12°C.
Ageing recommendations:
Ready to drink now, but will keep for up to five years in your cellar.
