Grape variety: Cabernet Franc
Terroir: Our Cabernet grows on silty, stony soils on bedrock of micaschist. Moderate yields maximise the aromatic potential of this characteristic Loire Valley grape variety.
Winemaking methods: After a short period of cold pre-fermentation maceration, the grapes are pressed and the wine completes its alcoholic and malolactic fermentation in vats.
Bottling: Bottling takes place in June in the year after harvest.
Tasting impressions:
Appearance: Ruby colour.
Nose: Extremely fruity with intense Morello cherry notes.
Palate: This wine has a sweet, fruity palate with the cherry flavours of the nose. A well-balanced combination of sweetness and tannins makes for a long-lasting finish.
Suggested food pairings:
For a surprising and very refreshing effect, this wine can be served chilled (10°C to 12°C) as an aperitif or with light desserts like tarts. It can also be served at room temperature, with a smoked duck salad for example.
Ageing recommendations:
Ready to drink now, but will keep for two to three years in your cellar. This red wine is best appreciated for its youthful aromas.
